Main Dish Entree
Cabernet-Braised Short Ribs
Mirepoix, demi-glace, gremolata

Serves 6-8
Warm covered at 300 degrees for 30 minutes or until hot. Warm the demi-glace gently over low heat in a small sauce pot or pan, stir often. Spoon demi-glace over the warm short ribs. Toss citrus zest and fine herbs with a little olive oil and sprinkle over the ribs just before serving.
Herb & Lemon Roasted Chicken
Organic whole chicken halved, preserved lemon, rosemary, thyme, olive oil

Serves 6-8
Preheat the oven to 375 and lay the chicken halves out on a baking sheet. Heat uncovered for 15-20 minutes until the chicken is reheated and the skin crisps. Take caution not to over cook the chicken or the breast meat can dry out.

Preheat the oven to 375 and place the dish in a larger pan and fill the pan 1/2 way up the sides of the dish with hot tap water. Bake the pudding for 40 to 45 minutes until the top begins to brown and a knife inserted in the center comes out clean. Serve warm.

pomegranate, Gorgonzola, pickled red onion, candied pecans, champagne vinaigrette
