Main Dish Entree

Cabernet-Braised Short Ribs

Mirepoix, demi-glace, gremolata

Serves 6-8 

Warm covered at 300 degrees for 30 minutes or until hot. Warm the demi-glace gently over low heat in a small sauce pot or pan, stir often. Spoon demi-glace over the warm short ribs. Toss citrus zest and fine herbs with a little olive oil and sprinkle over the ribs just before serving.

Herb & Lemon Roasted Chicken

Organic whole chicken halved, preserved lemon, rosemary, thyme, olive oil

Serves 6-8

Preheat the oven to 375 and lay the chicken halves out on a baking sheet. Heat uncovered for 15-20 minutes until the chicken is reheated and the skin crisps. Take caution not to over cook the chicken or the breast meat can dry out.

Potato Gratin

Potato, shaved fennel, cream, gruyere, parmesan, butter

Warm the gratin uncovered at 375 degrees for 20-25 minutes until hot and the sauce is bubbling.

Wild Rice & Delicata Squash

Wild rice, roasted delicata squash, quinoa, pomegranate, rosemary, parsley

Warm the gratin uncovered at 375 degrees for 20-25 minutes until hot and the rice filling is warm in the center.

Corn Pudding 

Fresh corn, half and half, Boursin cheese, butter, eggs, cornmeal

Preheat the oven to 375 and place the dish in a larger pan and fill the pan 1/2 way up the sides of the dish with hot tap water. Bake the pudding for 40 to 45 minutes until the top begins to brown and a knife inserted in the center comes out clean. Serve warm.

Baby Kale Salad

pomegranate, Gorgonzola, pickled red onion, candied pecans, champagne vinaigrette

Gluten Free 

Bring the vinaigrette to room temperature. Shake the dressing well and lightly toss the salad, taste for seasoning and add a sprinkle of sea salt and more dressing if needed.

Roasted Green Beans

Saffron velouté, savory pecan crumble

Warm the green beans uncovered at 375 degrees for 8-12 minutes until hot.

Christmas Margarita Mix

fresh lime juice, fresh lemon juice, agave, cranberry

Keep fresh juice chilled and shake with tequila or serve as a mocktail topped with sparkling water.

Chocolate Budino (6 individual portions)

Bring budinos to room temperature for 30 minutes before serving. Top with a drizzle of olive oil and a sprinkle of crunchy sea salt for serving.
